How-To Tuesday: Blanch Vegetables

I can't exactly remember when I learned to blanch vegetables, nor do I really recall who taught me. I would assume my mother, but then again, it could have been my aunt, my grandma, or even good old Google.

Blanching vegetables is pretty easy once you know what you're doing, and is perfect for delicious asparagus. (Definitely check out my recipe for Garlic Asparagus)

To Blanch Vegetables, start by bringing a large pot of water to a boil. While the water is coming to a boil, place your strainer in the sink and fill with ice. Prior to placing the vegetables in the water, make sure you have trimmed them to the appropriate size to (a) fit in the pan (b) to serve. Once water is boiling, place vegetables in for about 5-7 minutes (Smaller vegetables take less time). You will want to keep them in until they are just tender. You can test the vegetables tenderness by removing one piece and inserting a fork into the thickest part. If it goes in smoothly, then you are good to go. Next, remove vegetables from stove and using the lid pour out as much water as possible into sink. Then pour vegetables into strainer while having cold water rush over top. You will most likely need to add more ice as it will be melting with the hot vegetables. Remove the vegetables from the ice bath once they are no longer hot. You have now successfully blanched a vegetable! Congrats!

Weekend Wrap: Tour de Southern California

Last week, the kids and I spent some time in Sunny Southern California, hitching a ride with my mom, while waiting for my hubby to drive out the following weekend to join us.

We had such a blast spending time with our friends and family, but the cherry on top was getting to visit all of my favorite spots, plus enjoying some homemade goodies too!

Now, I will be posting most of everything we I consumed over the week, with the exception of a few meals I made myself (including peanut butter & jellys, mac & cheese, carnation instant breakfasts, etc) and some homemade goodness from my sister-in-law, so PLEASE - DO NOT START ADDING UP THE CALORIES. Yes, I know, I ate like I was a pregnant lady ready to pop, but hey! I was on vacation!

To start our trip, we of course had to stop by my parents ice cream parlor (and restaurant) Chaparral Homemade Ice Cream. With pretty much every meal they serve up my mom's secret recipe cheese ball, so my dad created what he calls the Wicken-bagel (because their town name is Wickenburg). They pick up some fresh bagels, toast them in their huge pizza oven and spread the cheese ball all over the center...sooo yummy...

From there we headed into Southern California, where my mom's long time friend picked us up our favorite mexican food from Juanita's. If you've ever eaten there you know what I'm talking about! My mom has been going there since she was in highschool, and carried on the tradition with me. What I find most entertaining is, the location of Juanita's is in a very...very.....not so great part of town, and if it were any other place other than Juanita's I'm sure my dad would have given me some long lecture of why I should NOT BE GOING THERE, but yet, for some reason, when we said, "Oh we're going to Juanita's", everything seemed A-O-K.

On Saturday, I met one of my favorite friends at Woodranch. I am completely bummed out that we do not have any of these in Arizona, but at the same time, it's probably a good thing. If you've eaten at Woodranch, then you know how amazing their butter rolls are that they bring to your table. At one point, our waitress brought us out a fresh steaming basket, because our full basket had cooled...A-MAZ-ZING! I'm thinking I should email them and suggest heading out to the Grand Canyon State!

After enjoying our Sundayg in 77 degree weather down in San Diego (which is quite a change from the consistent 108 degree's in Phoenix), my aunt and uncle dished up quite a delicious bbq. Charcoal grilled chicken, fresh veggies, corn on the cob, baby potatoes and mouth watering watermelon..YUM. For dessert, she whipped up homemade chocolate pudding, which as you can tell, my daughter loved.

Oh yes, I almost failed to mention, on Saturday, my Aunt (and daughter Aliyah) baked us a Buttermilk Pound Cake with Custard Sauce....

Now, if you know me well, you know my love for donuts. GOOD DONUTS. Growing up in So. Cal, we would have donuts all the time. Heck, I remember driving past three donut shops, just to go to my favorite one (Manna's Donuts), which later ended up having another donut shop right in the same parking lot. We'd get them for sports games, take them to work, or even drop by before church. When I moved to Arizona with my husband, we shared the same passion for donuts, and were very disappointed to realize that Arizona really does not have ANY GREAT DONUTS.  I mean seriously...Dunkin Donuts? No-Thank-You. After searching for over 4 years now, we have come across a few shops here and there that are managable, but still nothing like California, oh and I forgot to mention -- we have to drive at least 15-20 miles, just to come close to one of these mom and pop shops! Outrageous right???!!

Well, after my third morning at my Aunts, my Uncle finally came down the stairs saying, "No donuts this trip Jackie?" I replied with the fact that I was trying to hold out until Jeff (my husband) came that following weekend so we could go together. He then followed up with................what I used as an excuse to HAVE TO GO.....by him saying "Oh man, I can't remember the last time I had a donut.....probably the last time you were here." Seriously -- how could I let the guy down? We headed into downtown Murrieta and treated ourselves to one of the best donut shops I've ever had...probably even better than my childhood favorite Manna Donuts in Chino.

Our trip at my aunts concluded with Homemade Alfredo Sauce over angel hair pasta and a penne dish with tomato sauce and fresh mozzarella. I love pasta!!

As we waited Tuesday afternoon for my mother-in-law to take us on to the next portion of our vacation, I sunk my teeth into some fresh homemade bread, buttered and smothered in honey. I even snuck in a few extra pieces while the kids where taking their naps.

While spending some time at my sister and brother's home, one of their favorite fast food spots is Bakers. I remember loving their bean and cheese burritos, but hadn't eaten there in probably over 10 years. Of course we had to pick up a bite and it was just as yummy as I remember it being.....

My sisters and I picked up one of my favorite spots in Chino for dinner Wednesday which was at the Riverside Grill. If you've never been there before it's easy to miss as the entire patio is covered in trees and vines.

On Friday my husband finally arrived and we drove down to Huntington Beach to take the kids to the ocean for the first time. As a child, my husband and his family (along with many other friends and family) would go to the beach ever Wednesday. He remembered getting strips and cheese from Jacks right on the board walk. As we sat there together as a family, he reminisced of all the fond memories he has from going to the beach. He laughed a bit to himself, remembering how much trouble they would get in if they ordered  a soda. Strips and Cheese were all they were allowed, since they brought their own drinks.....but he mumbles to me, "But sometimes all I wanted was a Dr. Pepper, and mom didn't bring that all the time." So funny.

I remember ordering Strips and Cheese for the first time and being shocked that the cheese wasn't melted over top the thin crispy tortilla chips; but after taking that first crunch I was hooked!

Friday evening, after our fun filled beach day we headed over to my old stomping grounds, JoJo's Pizza Kitchen. I worked there as a waitress throughout college and then moved in to their office area as Marketing Director before moving out to AZ. I absolutely loved working their as a waitress, so many fond memories, but most of all I think I miss my tips and "regulars" (the ones that would request my section). We chowed down on some delicious pizza, while my husband's Grandma said that they served her the best lasagna she has ever had in her life. For *dessert* we ordered their apple pie pizza (apple pie filling covered in mozzarella cheese all served on a homemade pizza crust) and took it home to enjoy ala mode!

You're probably wondering how much longer I can  go on with my food post today right? .....Oh I can go on...and I will :)

Saturday morning as my husband drove me and the kids on our way to another donut shop we passed by a hamburger joint I don't think I've ever been too. He nearly slammed on the breaks saying "THAT PLACE HAS AMAZING BREAKFAST BURRITOS!" Of course I couldn't pass something like that up! He was right; they were so delicious. I'm actually craving it already for the next time we go to CA.

After our big breakfast my bestest friend treated me to *lunch* at the Avocado House. Another spot that I had never been too, but have been dying to try. My aunt actually knows the owner and everyone that I've talked to has had such great experience there. The restaurant was really neat, as it is an old house converted into restaurant. You order at the counter as you see all of the busy employees in the kitchen rushing breakfast out to everyone. I knew I wanted a cinnamon roll as she makes them homemade, but I did not see any on her dessert table. I was getting a bit bummed, so was trying to come up with a back-up plan if she didn't have any left. "Mmmm....Butterscotch loaf cake....Yes I'll get that" The man in front of me must have been listening in on my thoughts because the moment I decided on Plan B, he snatched up my mini loaf cake....so disappointed. There were several Vanilla Cranberry loaf cakes and what looked to be delicious brownies on the table too, but to my pleasant surprise as we approached the counter, a fresh batch of cinnamon rolls were pulled from the oven.....Mmmmm.

And finally, the wedding we attended had the cutest cupcakes at our tables displayed beautifully. Flavors included Carrot Cake, Vanilla with Raspberry Lemon frosting and my personal favorite: Chocolate with banana and peanut butter frosting....

Although it may seem that my trip was all revolved around food, we did get to spend so much wonderful time with friends and family. We were able to be a part of one of my close family and friends special day uniting as husband and wife...and the cherry on top was enjoying  delicious bites of my favorite places; many of them childhood favorites and a few unexpected additions to my list.

Can't wait for our next trip..........to see everyone of course!

Thankful Thursday: Jar Opener

This afternoon, as I took a moment to make my daughter and myself some lunch I *silently* ran through my head all of the things I needed to still do for the day.....I italicized "silently" because in reality my son was fussing because he was 20 minutes past his normal nursing time, my daughter Aliyah was running through the kitchen with the old school metal tonka dump truck that use to be my brothers, clunk, clunk clunk, clunk along the kitchen tile, I could hear Sesame Street on in the background, as my daughter demands it be on, even if she's not watching it, and my phone was ringing off notifications of unread emails and texts. So SILENTLY  I ran through my head all the additional things that needed to be accomplished in the hour-2 1/2 hour nap span coming up that afternoon while my beautiful daughter took her daily nap.

One item in particular that was going through my head was "Thankful Thursday." What was I thankful for today...."hmmm...." I thought as I grabbed the jar opener to open the sticky jelly container to spread on my daughters peanut butter and jelly sandwich. "What am I thankful for today in this kitchen?....." as I grabbed the jar opener again that I had just tossed back into the utensil drawer to open the jalapeno jar to add to my grilling quesadilla. As I cut up my daughters peanut butter and jelly sandwich, and took my quesadilla off the stove...I thought once again, "Honestly I'm at a stump of what to write about today...." When in midst of my thought, I was interrupted by the stubborn salsa jar that really.....ALL I WANTED TO DO WAS ENJOY A BIT OF SEASONED TOMATO SALSA WITH MY NOW COOLING QUESADILLA....can't a girl get a break? So once again, I grabbed my jar opener.........................

...............ok deep breaths.......it's just lunch.....................

My daughter is now down for a nap, and although it would be nice if my baby boy was down for a nap too, I am blessed to have him snuggling in my arms as I take a moment to write my Thankful Thursday post. You may have already figured out what I was thankful for today......................................

The answer was right there. As I was stressing over what to write about today, God, with His funny sense of humor, tightened all of the jars in my house, to assist me with a clear answer of what I should dedicate my Thankful Thursday blog post too. It's funny, when you're praying for answers, even as minor as help with a blog post, God is there revealing the answers to you....may not be the way you wanted the answer to come, but in reality he was smacking me across the head with assistance.

I have had this jar opener for nearly 4 years now, and it is still going strong! Although I have a studly man of a husband, he's not usually home during the day to come in with the assist when it comes to making lunch for the kids, or myself for that matter.

According to Wikipedia, the first jar opener was called a Gilhoolie. In 1954 it was patented as a " cam operated sliding jaw closure remover". Funny right?

Woo-Hoo Wednesday: Bridesmaid Gifts

This past weekend we attended my best friend's sister's wedding, and boy was it beautiful. I cannot wait to blog about it once I get all of my pictures loaded, but given that we were celebrating their marriage, it got me thinking about all of the little gifts and tid bits that go along with planning a wedding.

If you are recently engaged and looking for a way to ask your best girlfriends to stand as witnesses for you during your ceremony, you can plan what I did as a special gift when asking them to be your bridesmaids.

The colors of our wedding were champagne and celadon, (which is a variation of a green color), so to ask each of my friends and family to be in our bridal party I paired some themed flowers and ribbon with a small planner that they could add all of our important dates coming up in the next few months; bridal showers, bachelorette party, wedding rehearsal, WEDDING DAY!

There are so many cute planners out there and I thought this was a small memento to get everyone excited for the upcoming wedding festivities!

How- To Tuesday: Separate Egg Yolks

A few weeks ago I showed you *How-T*o hard boil eggs. Well, this week I wanted to go into detail of How-To Separate Egg Yolks. There are many different techniques and in fact even products that will help you to separate the yolk from the egg.

But really, you don't need all these *high tech*  gadgets to separate the egg from the yolk...heck our grandparents never had one of the Peter Petrie Egg Separators where the yolk comes out its nose (so gross).

So here ya go....

Some recipes you come across may only ask for egg whites or egg yolks or even both but separated. Here is a simple way to separate your egg yolk without the trouble of possibly leaving eggshell pieces behind or not separating the eggs completely.

You will need two bowls: one for egg yolks and the other for egg whites. The egg white is the clear portion of the egg. Crack the egg in half. Next, slightly tip the eggshell with the egg, allowing the egg whites to pour into the bowl. You can even use the other portion of the eggshell to hold the egg yolk in.

Alternate egg yolk from shell half to shell half until all of the egg whites have been poured into the bowl. Next, pour the egg yolk into the second bowl, and vwa-la! You have successfully separated the egg yolk from the egg white!

Weekend Wrap: Lemon-Filled Cake

It's Labor Day Weekend! Woo-hoo! Oh wait....those are suppose to be saved for Wednesdays. Ok-- Ya-HOO!! Now, I have searched and searched the internet to find this Paula Deen recipe that I got out of a magazine so I could just put a quick little link for you to view the recipe, but unfortunately I have had no luck! So the fact that I am going to type out this entire recipe verses getting back to my Labor Day festivities, means a lot. I LOVE YOU GUYS! All 14 of you! hah! Hopefully I have a few more readers :)

In respect to Paula Deen - HERE YA'LL GO!

Lemon-Filled Cake
Makes 1 (9-inch) cake

3/4 cup butter, softened
1 3/4 cups sugar
1 tablespoon lemon zest
3 large eggs
1/3 cup fresh lemon juice
3 cups cake flour
1 teaspoon baking soda
1 1/4 cups whole buttermilk
Lemon Filling (recipe follows, make 2 hours in advance)
Lemon Buttercream (recipe follows)
Garnish: lemon slices

Preheat oven to 350 degrees. Spray 3 (9-inch) cake pans with non-stick cooking spray with flour.

In a large bowl, beat butter, sugar, and lemon zest at medium speed with an electric mixer until creamy. Add eggs, one at a time, beating well after each addition. Beat in lemon juice.

In a medium bowl, combine cake flour and baking soda; sift. Gradually add to butter mixture, alternately with buttermilk, beginning and ending with flour mixture.

Pour evenly into prepared pans, and bake for 18 to 20 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks. Spread Lemon Filling evenly in between layers. Spread Lemon Buttercream on top and sides of cake. Garnish with lemon slices.

LEMON FILLING:
Makes about 1 cup

1/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 teaspoons lemon zest
2/3 cup fresh lemon juice
1/3 cup water
1 tablespoon butter

In a medium saucepan, combine sugar, cornstarch and salt. Stir in lemon zest, lemon juice and water; bring to a boil over medium-high heat. Boil for 1 minute. Remove from heat and stir in butter . Pour mixture into a small bowl; cover and chill for at least 2 hours.

LEMON BUTTERCREAM
Makes about 2 1/2 cups

1 cup butter, softened
2 teaspoons lemon zest
3 tablespoons fresh lemon juice
4 1/2 cups confectioners' sugar

In a large bowl, beat butter and lemon zest at medium speed with an electric mixer until creamy. Beat in lemon juice. Gradually beat in confectioners' sugar until smooth.

Quick note from my experience baking this cake. My husband and I cannot and should not be consuming a 3 layer cake, so although I do make all three layers as the recipe directs, I only make my cake 2 layers high. Which works out great because for some reason one of my three cakes always tends to stick to the pan and become all funky! 

So although I have not done this part, and I'm only just now thinking of it, the next time I bake this cake and have one layer left over I think I'm going to turn them into cake balls with the extra lemon frosting, then dip them in white chocolate. Oh man -- I'm craving it already....

Thankful Thursday: KitchenAid Stand Mixer

HAPPY SEPTEMBER EVERYONE! Can you believe it is already September 1st? I surely can't. I am so excited for it to start cooling off a bit out here in AZ so we can start going to the park again with the kids. But anywho, enough about me and my excitement for the fall (which did I mention- CAMPING SEASON? Um, hello, so excited) Ok ok -- seriously, Thankful Thursday. As promised I am Thankful today for my KitchenAid Stand Mixer

I mean, seriously, what's not to love about this thing? As if the mixer itself wasn't totally awesome, they sell a kazillion attachments that go along with it. Ravioli Maker (I’m adding this to my list of MUST HAVES VERY SOON!), Fruit and Vegetable Strainer and Grinder, Pasta Maker, Cheese Grater, Ice Cream Maker? Seriously – a-maz-ing, Citrus Juicer, Meat/Food Grinder...the list goes on..

Usually my mixer gets the most use when I'm on a cinnamon roll kick or whenever we want to grate cheese. (Which my husband is in love with that attachment).

But really this post was intended to be for all the neat facts I found about mixers....

As previously stated in my post about Hand Mixers, the mixer was invented by Herbert Johnson, and well he invented the standing mixer in 1908 for mixing bread dough. In 1919, (after being sold for 4 years to professional bakers) the stand mixer was sold by KitchenAid to people at home and in 1954, KitchenAid offered mixers in other colors than white! (Heaven forbid it doesn't match your kitchen!)

The part that I found most interesting about the information I read, was that when World War I hit, the company Hobart (now named KitchenAid) couldn't really market the mixer to the "housewives", but many company executives were able to test the models at their home. Apparently one wife said, "I don't care what you call it, all I know is it's the best kitchen aid I've ever had!" And that's how KitchenAid supposedly got it's name.

Another piece of info that I found outrageous was that the countertop (5-qt) KitchenAid mixers were sold for $189.50 which was the equivalent to $2,000 in 2002. CRAZY!

Although still a bit pricey, I think they are totally worth the $200-$400, especially if they come as a wedding gift (as mine did!)

If you don't have one yet, add it to your Christmas List now!! You'll need the 4 months just to decide what color to pick :)
