How To Tuesday: Make Artisan Bread

You guys are not going to believe what happened yesterday. I started on a project (which you'll see tomorrow for Woo-Hoo Wednesday), when I ran out to my car  to grab my camera. I had left it in the center console of my truck because we tried to go see Santa over the weekend (Which come to find out, you need to go about 2 hours earlier just to get a pass to wait in line for another hour to see Santa at the Bass Pro Shop). Anyways, I ran out to my truck, popped open the center console, grabbed my camera and THEN...

...you know the slow motion part in movies where the good guy tosses his partner a gun and it's revolving slowly until he catches it? Or that part where you hear the loud, "nooooooooooooooo" and the actors mouth is stuck in an "I'm about to eat a banana" position and it sounds real low and deep? (Seriously people, I can imagine these things as I type...so hopefully you're following along). So, as slow as slow motion, but as fast as "I can't even think let alone react" this happened so fast and PLOP! - My camera fell directly into my full cup of water still sitting in my cupholder! PLOP!

PLOP!

Really? Plop?!

Yep, Plop.

As fast as it went plop is as fast as I snatched it out of the water and ran into the house, comforting it like a wounded puppy. I dried off the outside, removed my battery and SD Card and immediately went to the most knowledgeable and reliable resource I have - FACEBOOK! (Ok -- I'm lying when I say its my most knowledgeable and reliable source...but I did seek out my friends on FB).

Their advice - Rice - Cover the camera in rice and let it sit for 3 days.

3 days? Yes - 3 days -
So there it is -- sitting in rice

I am so sad about this. Anyways, since my camera is still out of commission,  the pictures for tomorrow post are a little grainy since I took them on my XOOM. It does have a flash though, which is a step up from my phone, so yeah for that! And yeah for technology!

Ok - now on to my Artisan Bread shpeal - That's why you came here right? Not to hear about my poor, lonely camera - sitting all alone in that white rice, more than likely never to see the light of day again - Overboard? Ok maybe a little.

Artisan Bread. Have you ever made it? I hadn't, up until about a month ago when my dear friend Rachel opened my mind and led me into this heavenly world of homemade bread! I have already informed her that when, not if, but when I gain 20 extra pounds, it will all be her fault - and the Artisan Bread!

I've already made it several times and started adding a bunch of extra flavor of course too! My first batch I made it just like her instructions, but the 2nd time I added seasoning salt, Italian seasonings and garlic to one loaf and butter, cinnamon and sugar to another! All three were oh-so-amazing!

The recipe comes from the book: Artisan Bread in 5 Minutes a Day - written by Jeff Hertzberg and Zoe Francois, but a few minor things were changed while I made it.
This recipe is called The Master Recipe: Boule

3 c. lukewarm water
1 1/2 Tbsp yeast
1 1/2 Tbsp salt
6 1/2 c all purpose flour




Add yeast and salt to warm water, then mix in the flour. You know how usually you spoon in the flour and then level it off with a knife? Well, forget about that. Just scoop the flour using your measuring cup and swipe your finger over  top. Then when you get to the 1/2 cup, you can just "eye-it" in your one cup measuring cup. Simple right? Mix all together until combined. Your dough will be very wet. You wont have to knead the dough either.

From the bowl, plop the dough into a larger lidded storage container. (I used my large plastic water pitcher with a lid.) Let the dough sit on your counter, in the covered storage container for about 2-5 hours. What's great is that you can kind of forget about it and go on with your other tasks.

After the first rise, punch it down (literally punch the dough with your fist a few times) and return the lid. Place it in your refrigerator. You can leave it in your refrigerator for as little as 3 hours or up till about 10-12 days. The longer you keep it in the refrigerator, the more sour dough it will taste, although I left it in for 3 days one time and it was pretty sour enough.

When you are ready to bake, take the dough out of the fridge. You will want to have your pan ready for where you will place your loaves. Now remember, this dough is very wet, so make sure to flour your knife and hands when handling the dough. Remove the dough from the sealed container and cut into three sections. Form each section into a loaf with your hands, trying not to handle it too much because there will be less air pockets, making the loaf more dense. Oh yes, I did spray my pan with cooking spray/Pam.

Once your three loaves are placed on the cooking pan, lightly dust the tops with flour. At this point, if you would like to season them please do so. Also, using a knife make about 4-5 partial slits to the top of each loaf. This will allow the loaf to rise and bake into a beautiful delicious loaf without any - well for lack of a better term - blow outs.

Cover the pan with saran wrap and let rise (on your counter) for 40 minutes. The bread will not rise much, but don't worry, you're still on the right track. After the 40 minutes, preheat your oven to 450 degrees. Place an empty broiler pan on the lower shelf. (FYI - do not use glass, it will shatter when you add the water, just trust me on this one.) When the oven is preheated, add 1 cup of water to the broiler pan and immediately stick the loaves into the oven, just above the lower pan, on the next rack. The water will create a moist environment in your oven giving you a crisp outer crust and soft loaf.

Bake for about 20 minutes. Remove from oven and let cool on wire racks.

Enjoy warm with butter and if you'd like some honey too!

Weekend Wrap: Green Chili Crock Pot Chicken

This week, like many of us I'm sure, I was running a bit short on time. Wrapping up all the Thanksgiving festivities, scheduling out all of our Christmas parties, shopping and more, Christmas Shopping, Christmas Cards,  and more; so finding time for a yummy delicious dinner was, well, I hate to say it, but on the back burner.

I had a can of Green Chili Enchilada sauce in my pantry so instantly I thought - Chicken in a Crock Pot! Yum! (and easy of course)

I added about a teaspoon of Cayenne pepper and some seasoning salt to the sauce and then placed 3 boneless skinless chicken breast in the Crock Pot. (you can put them in thawed or frozen, doesn't matter - just takes a bit longer on cooking time if they are frozen).

4 busy hours later - Green Chili Chicken! -   now that's my kind of meal!

We wrapped them in tortillas with refried beans and shredded cheddar cheese for burritos!

What is so marvelous about this chicken is, after our burrito night, we are now enjoying it over nachos and also mixed with refried beans as a bean dip! So many delicious meals and snacks that took about 5 minutes of preparation and 4 hours of "I don't have to think about it" cooking hours!

Thankful Thursday: Reason for the Season...

You've all probably heard a handful of people say comments like "Remember the Reason for the Season" or "Keep Christ in Christmas" or something along these lines.

As a mother now of two little ones I am raised with the responsibility of teaching my children the true beauty of this season and the amazing gift and sacrifice our Father in heaven has done for us. He gave his Son, his very own, so that we all could be saved. I'm sure for many of you, this doesn't come into true retrospect until you have children of your own, as it did for me.

Well, as you've been following my blog, you know that although my main purpose is to focus on food and DIY, I just can't help myself but let you in on my world and what goes on in this house.

I've been dying to have an Advent Calendar for years now, but whenever I muster up the excitement to go to the store to purchase one, I always leave empty handed because....seriously .... this girl ain't about to spend $30 on a little box Advent Calendar that I look at and say, "I could make that", when in reality I still haven't made one! But still...I COULD!

Any-who, my daughter is about to turn two and is really just at the beginning of the excitement for Christmas. I want to make sure she is filled with the joy of this season; Christmas music, presents, hot cocoa- even if we do have to crank up the air conditioner here in AZ just to put on comfy pj's and bundle up with a cup of hot cocoa! But at the very same time, I want to teach her the reasons we gift give and praise the Lord for his blessings upon us.

I decided, what better way to share the story of Christmas but through our Advent Calendar...that yes, I made, and am looking forward to making it year after year.

As a child I remember getting little chocolates each day we opened the door to our Advent Calendar. There really wasn't any meaning in the calendar, other than the fact that I got a piece of chocolate and we were one day closer to Christmas. But really I want to make it our tradition to have the story of the birth of Jesus Christ each day our children open up their little envelope...

In each envelope I included one to two verses from the bible along with a little piece of chocolate to enjoy. I decided to secretly hang all of the verses on my little tree to take a photo for everyone to see, before placing them in their envelopes sealed with a kiss! I absolutely love the way they turned out and can't wait for my husband to come home tonight for him and the kids to open Day 1's envelope!

Woo-Hoo Wednesday: Christmas Time...

I. Just. Can't. Do. It......I. Can't. WAIT. ONE. MORE. DAY!

My Christmas excitement is about ready to BURST! I know today is November 30th. And I know we should separate our Thanksgiving from our Christmas. And I know December is just one day away. I know I know I know. But seriously people -- my Christmas lights are up, my home is decorated, and I've already started blaring the Christmas music in the house and car. can you hear my music? Frosty the Snowman was a la-di-da-di-da...Ok, so I don't know the words, but neither do you. And just for a moment here, while we're talking Christmas songs, did you know when they describe Mr. Grinch, they say he has Garlic in his Soul? -- Personally, I don't really think that's a bad thing. It actually makes me salivate just thinking about it. Too much? Ok, maybe I let you inside my brain a little too much on that one, but seriously people...garlic in your soul, could you imagine? Mmmm...

So, are you on Pinterest? Well, actually should I say, are you addicted to Pinterest yet? Logged in on your stationary computer, laptop, Xoom, phone, or is this just me? 


At first I was a little hesitant about this whole Pinterest thing. What do you mean, "I have to be invited?" And what is it all about? Boards? Pins? Likes? Repin? == Huh?


Wikipedia describes behavioral addiction as a recurring compulsion by an individual to engage in some specific activity. Yup that's me! Addicted to Pinterest!

How- To Tuesday: Make a yummy leftover ham sandwich

I know, I know -- I'm excited to start talking Christmas too, but technically, I've got so many Thanksgiving leftovers I can't even imagine starting to talk about Christmas yet.

Are you still munching on leftover potatoes or ham or turkey? There are so many creative things you can make with the leftovers. My husband remembers always enjoying shredded turkey sandwiches at his grandma's house, where she would mix cream of mushroom soup along with the shredded turkey and toss it in the crock pot. She may have added a few more ingredients, but that's all he remembers, creamy - turkey - goodness!

Well, my husband nearly had a heart attack when I made him breakfast with our leftovers. I know its pretty basic, but it's the little things that really gets him going :)

Butter two dinner rolls and place in your broiler oven for about 5-7 minutes until toasted

While bread is being toasted, fry two eggs until over medium. (just long enough for the egg to be cooked, but a little yolk to drizzle on the sandwich).

Slice leftover ham and fry in same pan as eggs until warmed.

When bread is toasted, smother with jam or now that I think about it, you could even use your leftover cranberry sauce too!

Stack sandwich with egg and ham.

Don't forget a napkin! And Enjoy.

Weekend Wrap: Homemade Cinnamon Rolls

Taking a moment before I jump right into Christmas mania, to talk about my wonderful Great Grandma Johnson. For years, every Christmas she would make all of us yummy cinnamon rolls that came all bundled together on a plate to enjoy. When I was first married I made sure to make a trip down to her home so she could teach me her recipe. (keep in mind, these photos are from a few years ago)

Great Grandma is always so humble, never to boast about anything of her doings, and she is appreciated by us more than she'll ever take credit for. Not only did we get to look forward to her yummy cinnamon rolls, but also to homemade pajamas ever Christmas, hand crochet's slippers and a cross stitched memento of some sort, usually an ornament. Although I haven't gotten into the cross stitching yet, I have made a few crocheted slippers, working on my daughters first pair of homemade pajamas and yes, I'm about to carry on the cinnamon roll tradition.

I love that my kids will be able to enjoy the sweet comfort of Great Grandma even though we are miles a part. Maybe next time we go visit, I'll be the one to bring the goodies!

Thankful Thursday: Happy Thanksgiving

Happy Thanksgiving Everyone - What a wonderful day to celebrate and reflect on everyone and everything that I am thankful for. And how perfect is it that it's also Thankful Thursday!

I know most everyone turns to today and states that they are most thankful for their family. And this is true for me as well, but my family doesn't just include my blood family, it also include the family that I have gained by marrying my amazing husband, my family of friends whether long time or newly developed, and my family of Christian believers.

I am thankful for the family God has chosen for me
I am thankful for the support of my family and their encouragement on a daily basis
I am thankful for my family that I don't see everyday, or even every month or year
I am thankful for my close nitch friends that I consider my family
I am thankful for my friends who have only stayed for a season, because they have helped mold me into who I am today
I am thankful for my friends who have been with me a lifetime, because they are still helping me become who I am suppose to be
I am thankful for my husband who is overly supportive and loves me beyond what I can imagine
I am thankful for the beautiful children God has given me
I am thankful for my church and community of believers, who even if I don't know them personally, they inspire me each moment I am in their presence
I am thankful for each opportunity God has given me
I am thankful for the open mind and heart God encourages me to use each and every day

For all of these things I am able to be thankful because of the powerful grace and love of our Heavenly Father.

Today we celebrated Thanksgiving at my home, where we all brought our favorite dishes and enjoyed the company of one another.

The pumpkin for my centerpiece was a must have for me! I had seen it at Hobby Lobby for over a month, but it was way out of my price range...but then, to my absolute pleasant surprise it was 80% off just a week before Thanksgiving - cha ching!
